"No One Can Beat The Wheat"

Abstract

Beat the Wheat is the story of a team of highly dedicated Bryant University students who saw the suffering that 1 in every 133 people in the world have as a result of Celiac disease - an allergic reaction to glutin - a common substance found in most food items. Armed with extensive research information, Jackie Belknap and Jen Dilapi, Team Leaders, worked with their fellow teammembers to develop a business plan with the hopes of opening a one of a kind bakery in Rhode Island that caters specifically to selling strictly gluten free products! In addition to helping the many individuals suffering with this disease, the students also discovered that there have been tests that show significant benefits for Autistic children with switch to eating a gluten free diet.
